Garlic Lemon Cheese Stuffed Chicken

- 2 chicken breasts boneless skinless
- 4 tablespoon olive oil
- 8 cloves garlic minced
- 1 lemon juice of
- 1 lemon sliced
- 1 teaspoon paprika
- ½ teaspoon salt
- 2 teaspoon oregano
- 1 teaspoon cumin
- 8 slices Cabot Extra Sharp cheddar cheese
Cut the chicken lengthwise but don’t cut it all the way through, ¾ way is enough.
Mix olive oil, minced garlic, lemon juice, salt, paprika, oregano and cumin in a bowl and rub this inside and outside of the chicken.
Fill inside of the chicken with the cheese slices and the lemon slices. Seal the chicken with toothpicks.
Preheat the oven to 350F.
Heat an oven safe pan over medium high heat. Once hot, place the chicken breasts in the pan and sear for about 4-5 minutes on each side. Flip once to have both sides seared perfectly.
Place the pan in the oven and bake for about 20 minutes until the chicken is cooked perfectly.
Serve with your desired side dish.
- If you don't own an oven safe skillet, simply sear the chicken breasts in a regular skillet and transfer them to a baking sheet lined with parchment paper.
- Store the leftovers in an airtight container and refrigerate for up to 3 days. Reheat in the oven at 250F for about 20 minutes until heated through.
- If the chicken breasts are too thick, pound them using a meat tenderizer and then stuff them with cheese and lemon.
- Don't over bake the stuffed chicken breasts because they will lose their flavor and dry out.
