Garlic Oven Roasted Brussel Sprouts Recipe

Oven roasted brussel sprouts are easy and ready in 20 minutes. Crispy brussel sprouts roasted in the oven with lemon and garlic make a great side dish.

  • 1 lb brussel sprouts See notes
  • 3 tablespoon olive oil extra virgin
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 6 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon coriander

Yogurt tahini sauce

  • ½ cup plain yogurt
  • 2 tablespoon tahini
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon water


  • Preheat the oven to 400 F.
  • Prepare the brussel sprouts by trimming them (if needed) and place them in a bowl.
  • Add in the olive oil, lemon juice, lemon zest, minced garlic, salt, pepper and coriander. Stir well to combine. Make sure every brussel sprout is coated with olive oil.
  • Transfer them to a clean baking sheet. If you have time, flip them so the cut side is down. This will make the roasted brussel sprouts crispier.
  • Roast the brussel sprouts in the oven for 20 minutes.
  • Serve warm with the yogurt tahini sauce.

Yogurt tahini sauce

  • In a small bowl mix together the yogurt, tahini, salt, lemon juice and water. Add more water if you would like the sauce to be thinner.


  • Make sure the oven temperature is high. The high temperature makes the brussel sprouts super crispy edges. 
  • Use the right amount of olive oil to make these oven roasted brussel sprouts. The right amount of oil is necessary to caramelize the sprouts. 
  • If you have a micro blade, add in the lemon zest to the brussel sprouts as well. 
  • Can I use frozen brussel sprouts? You can. If using frozen brussel sprouts, thaw them and pat dry them completely. Then roast them for about 35 minutes instead of 20 minutes. 
  • You can make a big batch of this roasted brussel sprouts and add it to different dishes such as omelets, salads or rice.
