Lemon Chicken
- 2 chicken breasts cut in half lengthwise
- 2 lemons juice of
- ¼ cup olive oil
- 1 teaspoon paprika
- 1 ½ teaspoon dried oregano
- 1 teaspoon salt
- 4 cloves garlic minced
- ½ tablespoon olive oil
Rice
- 4 bags Success® Basmati Rice
- ¾ cup fresh parsley chopped
- 1 lemon juice of
- 1 teaspoon salt
Lemon Chicken
In a large bowl, mix lemon juice, olive oil, paprika, oregano, salt and minced garlic.
Place a chicken breasts in the marinade and flip to make sure the chicken breasts are completely marinated.
Cover and refrigerate for 30 minutes.
Heat ½ tablespoon olive oil in a pan over medium heat. Place the marinated chicken breasts in the pan and sear on one side for 4 minutes. Flip and sear the other side for another 4 minutes until fully cooked.
Rice
Prepare Success Basmati Rice according to the package instructions.
One the rice is cooked, place it in a bowl and fluff it using a fork.
Add chopped parsley, lemon juice and salt to the rice. Mix well.
Serve with pan seared lemon chicken.
- You can bake lemon chicken at 400°F for 20 to 25 minutes instead of pan searing.
