Sheet Pan Honey Balsamic Chicken

- 2 lb chicken thighs boneless skinless
- ¼ cup Balsamic vinegar
- 1 tablespoon honey
- 2 cloves garlic minced
- 2 tbsp olive oil divided
- 1 pack McCormick® Farmer’s Market Chicken & Vegetable One Sheet Pan Seasoning Mix
- 6 mini peppers
- 1 onion cut into large chunks
- 1 zucchini cut into chunks
- 1 Italian eggplant cut into chunks
Preheat the oven to 425°F and coat a baking sheet with cooking spray.
In a large bowl mix balsamic vinegar, honey, garlic, 1 tablespoon olive oil half of the McCormick® Farmer’s Market Chicken & Vegetable One Sheet Pan Seasoning Mix. Add the chicken to this mixture and make sure every piece is well coated. Place the chicken pieces on the baking sheet.
Mix the vegetables with 1 tablespoon olive oil and the rest of the McCormick® Farmer’s Market Chicken & Vegetable One Sheet Pan Seasoning Mix. Add the vegetables to the baking sheet as well.
Bake in the oven for about 25 minutes until the chicken is fully cooked and the vegetables are tender.
- You can also use boneless skinless chicken breast for this recipe.
- You can use green or red bell pepper instead of mini peppers.
