Cranberry White Chocolate Oatmeal Cookie Bars

These Cranberry White Chocolate Oatmeal Cookie Bars have all the good flavors in one single bite! Sweet and tart cranberries go very well with festive white chocolate morsels!

Ingredients

  • ½ cup unsalted butter room temperature
  • 1 egg room temperture
  • 17 oz oatmeal cookie mix
  • ¾ cup unsweetened dried cranberries
  • ¾ cup white chocolate chips

Instructions

  • Preheat the oven to 375° F. Coat a 9x9 baking pan with cooking spray and then line with parchment paper.
  • Mix the butter and egg until fully combined, about a minute. Add in the oatmeal cookie mix. Mix until well incorporated.
  • Add in ½ cup dried cranberries and ½ cup white chocolate chips and mix to combine.
  • Spread the cookie mixture in the baking pan.
  • Sprinkle ¼ cup dried cranberries and ¼ cup white chocolate chips on top.
  • Bake in the oven for 25 - 27 minutes until the edges are set and the middle is a bit gooey.
  • Let cool completely then cut into 16 squares.

Notes

  • Store the leftovers in an airtight container and keep in a cool and dry place for up to 3 days. 
  • If desired, add ½ cup chopped nuts such as pecans, walnuts, almond or pistachios. 
  • I don't recommend making the oatmeal cookies from scratch since each recipe is different and some might not turn out well as bars. 
  • Fresh cranberries contain too much liquid therefore they won't work for this recipe.
