Colcannon Mash

Colcannon Mash is a delicious appetizer that's perfect for St. Patrick’s Day. The easy and delicous combination of potatoes and cabbage is perfect!

Ingredients

  • 1 lb Red Potatoes Washed
  • 4 tablespoon Unsalted Butter
  • ½ cup Whole Milk
  • 2 tablespoon Olive Oil
  • 1 large Onion Sliced
  • 6 cups Shredded Cabbage
  • 1 teaspoon Salt
  • ¼ teaspoon Black Pepper
  • cup Chives Chopped
  • 1 package Cooked Perfect Fire Grilled Chunks Buffalo Ranch

Instructions

  • In a large post, boil the red potatoes until fully cooked. 
  • Meanwhile, heat olive oil in a large pan, saute sliced onion until golden. 
  • Add in shredded cabbage and cook until it's soft and cooked. Add in salt and pepper. 
  • Drain the potatoes and place them in a large bowl. Leave the skin on. 
  • Mash the potatoes using a fork or a potato masher. Add in butter and milk, mix well.
  • Mix in the onion and cabbage mixture into the mashed potatoes.  Mix in with chopped chives. 
  • Prepare Cooked Perfect Fire Grilled Chunks Buffalo Ranch according to the packaging. Serve with Colcannon Mash. 

Notes

If chives are not available, use scallions to add more flavor to Colcannon Mash.
