Spanish Tortilla


- Olive oil  - Onions - Potatoes - Eggs - Salt and pepper

Saute onion in olive oil until golden.

Add in the potatoes and cook until soft.

Mix the eggs in a large bowl.

Add the the potatoes, onion and salt.

Cook the tortilla in the pan until the bottom is golden. Flip and cook on the other side as well.

This would make a tasty breakfast  or brunch.
