Ingredients

  • 8 oz brie
  • 2 tbsp honey
  • 2 tbsp walnuts chopped
  • 2 tbsp pistachios chopped
  • 4 dried apricots chopped
  • 1 sprig thyme optional
  • 2 tbsp pomegranate arils

Instructions

  • Preheat the oven to 325 degrees F. Gently cut diamonds on the top rind but don't cut into the cheese. This is for easy serving. Place the brie in a cast iron skillet or a shallow baking dish.
  • Drizzle 1 tablespoon of honey (or more if you like) on the brie and top with chopped walnuts, pistachios, apricots and the thyme sprig.
  • Bake in the oven for 15 minutes, the top will be soft to the touch and the cheese will still hold its shape.
  • Take the pan out of the oven, top with pomegranate arils, more thyme and honey if desired.
  • Serve immediately with crackers or crostini.

Notes

  • You can simply leave out all the toppings and just use honey, maple syrup or agave nectar.
  • Baked brie will stay melted for 15 minutes, however, it'll still be spreadable at room temperature.
  • Store the leftovers in an airtight container and refrigerate for up to 3 days. Reheat in the microwave for 1 to 2 minutes until melty again.
