Easy Salmon Patties Recipe

Ingredients

  • 1 lb salmon
  • 4 tbsp olive oil divided
  • 1 shallot finely chopped
  • 1/2 yellow onion finely chopped
  • 2 cloves garlic minced
  • 1/2 red bell pepper diced
  • 1/2 cup olives chopped
  • 3 eggs
  • 1 cup bread crumbs
  • 1 tsp sumac
  • 1/2 tsp cumin
  • 1/2 tsp kosher salt
  • 1 tsp dried dill
  • 1 tsp Dijon mustard

Instructions

  • Preheat the oven to 400 ℉. Coat a baking sheet with cooking spray. 
  • Place the salmon pieces on the baking sheet and brush olive oil and season lightly with salt and pepper.
  • Bake the salmon in the oven for 20 minutes until fully cooked and flaky.
  • Meanwhile, heat two tablespoons olive oil in a pan over medium high heat. Saute the shallot, onion, garlic and bell pepper until they are soft and onions are translucent. 
  • Once the salmon is cooked, remove the skin and flake it using a fork and place it in a large bowl. 
  • Add the cooked shallots, onions, garlic and bell pepper to the flaked salmon and mix well. 
  • Add in the olives, eggs and breadcrumbs and mix well so all the ingredients are well incorporated. 
  • Add in the sumac, cumin, salt, dried dill and Dijon mustard and stir well. 
  • Heat the remaining olive oil in a pan over medium heat. 
  • Scoop out the patties uing a 2-tablespoon scoop, and shape them with your hand. 
  • Pan fry the patties in the pan, for about 5 minutes on each side until they are crispy and golden on the outside. 

Notes

  • You can make salmon patties using canned salmon as it would work perfectly for this recipe. If using canned salmon, start from step 4, saute the vegetables and make the patties. Make sure to pick out the bones and skins, at least the large ones. 
  • You can use regular breadcrumbs or panko breadcrumbs which are larger. Both would make the patties soft on the inside.
  • Don't use a food processor to make the salmon patties mixture as it will cut the salmon into very small pieces and you won't have flaky patties in the end. Using a fork to flake the salmon is a better way to make these patties.
