Mediterranean Chickpea Salad

This salad is filling, yet light and has a zesty freshness that will satisfy your lunch or dinner cravings.

Ingredients

Dressing

Salad

  • 1 can Chickpeas          15 oz.
  • 2 cups Red cabbage
  • ½ cup Olives chopped
  • ½ cup Fresh dill chopped
  • 1 Red or yellow bell pepper diced

Instructions

  • In a large bowl mix the olive oil, lemon juice, sumac, salt and pepper.
  • Drain the chickpeas and add them to the bowl followed by the cabbage, olives, dill and chopped peppers. Toss everything so they're coated with the dressing.
  • Let it sit in the fridge for 1 hour if desired and serve.
