Middle Eastern Tahini Salad

A 10-minute salad with classic Middle Eastern flavors, from the nuttiness and tang of the tahini dressing to the cucumber tomato veggies, this salad can be served with almost anything.

Ingredients

Tahini Dressing

Salad

  • 3 Persian cucumbers chopped
  • 2 Roma tomatoes chopped
  • 1 small Red onion chopped
  • ½ cup Parsley chopped

Instructions

  • Place the tahini, lemon juice, garlic, salt, pepper and water in a large bowl and mix using a spoon or a small whisk.
  • Add the chopped cucumbers, tomatoes, red onion and parsley to the dressing and stir to combine.
  • Taste and add more salt and pepper if needed.
  • Serve immediately, or refrigerate for 15 minutes before serving.

Notes

Thin out the dressing: If your tahini dressing is too thick, gradually add a small amount of water or lemon juice while whisking until you reach your desired consistency. 
Thicken the dressing: If the tahini dressing is runny, add a few squeezes of lemon juice and mix well to thicken it up.
Customize the flavor: Try adding a pinch of cumin, smoked paprika, or sumac for a hint of warmth and complexity. 
Prep ahead: Save time on busy days by prepping the ingredients for your tahini salad in advance. Chop the vegetables, mix the dressing, and store everything separately in the refrigerator until ready to assemble and serve.
