Pomegranate Guacamole

Guacamole just got a festive makeover. With ruby red pomegranate seeds, feta, and walnuts, every bite is packed with flavor.

Ingredients

  • 4 Ripe avocados
  • 1/2 Red onion diced
  • 1 Lime juice of
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
  • 1/4 cup Cilantro chopped
  • 1/2 cup Pomegranate arils
  • 1/3 cup Walnuts chopped
  • 1/4 cup Feta crumbled

Instructions

  • Cut the avocado in half, remove the pit and scoop out the flesh using a spoon.
  • Using a fork, mash the avocado to your liking. Add in the red onion, followed by lime juice, salt, pepper and cilantro. Mix to combine
  • Squeeze the lime and add the juice to the avocado and red onion. 
  • Transfer the guacamole to a serving bowl. Top the guacamole with pomegranate arils, walnuts, crumbled feta cheese and more chopped cilantro. 
  • Serve with tortilla chips.
