Whole Baked Apples
Using a paring knife, cut around the stem and remove it. Then using a small spoon, scoop out the insides. Be careful to avoid damaging the apple and make sure the bottom is intact.
Mix the olive oil, honey, oats, cinnamon, salt, raisins and walnuts in a bowl. Using a small spoon, stuff the apples with this filling.
Place the apples in an oven-safe dish and add 3/4 cup of water. Bake for 45to 55 minutes. The apples are ready if you can insert a knife easily into them. They should still keep their shape and not be mushy.
Sliced Baked Apples
Peel and slice the apples. Place them in an 8x8 baking dish.
Add the olive oil, honey, oats, cinnamon, salt, raisins and walnuts to the apples and combine well using a spoon.
Bake for 35 to 45 minutes until the apples are tender.
- You can use a variety of apples including Honeycrisp, Granny Smith, Golden Delicious, Gala or Pink Lady.
- If desired, leave out the oats and add 1/2 cup walnuts.
- Serve baked apples with ice cream, whipped cream or Greek yogurt with some additional honey.
