Churro Coating:
- 1/4 cup unsalted butter melted
- 1/2 cup granulated sugar
- 1 tbsp cinnamon
Chocolate sauce:
- 4 oz dark chocolate
- 1/3 cup heavy cream
Mix the milk with white vinegar and let it sit for 10 minutes. You can use this as buttermilk in this recipe.
Mix the milk mixture, oil and eggs in a large bowl. Add in the sugar, flour, baking soda and baking powder to the mixture. Mix until combined but don't overmix the batter.
Preheat the waffle iron. Depending on the size of the iron, pour 1/4 - 1/3 cup of the batter in the waffle iron and cook for 3-4 minutes, until it starts steaming and the waffle is golden brown and cooked.
Churro Coating:
Mix the sugar and cinnamon, set aside.
Once the waffles are cooked, brush them with melted butter on both sides and sprinkle generously with cinnamon sugar.
Chocolate Sauce:
Heat heavy cream in a small sauce pan until just starts to simmer. Turn the heat off, add chopped chocolate and stir until melted and combined.
Serve churro waffles with chocolate sauce.
