Course: Dressings
Cuisine: Greek, Mediterranean
Servings: 8
- ½ cup feta
- ½ teaspoon oregano
- 1 clove garlic grated
- ¼ teaspoon pepper
- ⅓ cup yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- water
Break the feta into smaller chunks and place them in the food processor. Add the dried oregano, grated garlic, pepper, yogurt, olive oil, and lemon juice.
Pulse the ingredients a few times until they begin to blend and break down.
Gradually add water, one tablespoon at a time, and continue blending until the dressing reaches your desired consistency.
Use Feta in Brine: For the creamiest, most flavorful dressing, choose feta that’s stored in brine. It’s more moist and tangy, which enhances the overall taste.
Control the Texture: If you prefer a chunkier dressing, pulse the ingredients just a few times in the blender or food processor. For a smoother dressing, blend it longer or add more water until you reach your desired consistency.
Adjust Seasoning: Taste the dressing after blending and adjust the salt, pepper, and lemon juice to suit your preferences. Remember, the flavor will intensify after sitting for a bit.
Make Ahead: Prepare the dressing in advance and store it in the fridge. The flavors meld and improve over time, making it even more delicious the next day.
Thin it Out: If the dressing thickens too much after refrigerating, simply stir in a tablespoon of water to bring it back to the perfect consistency.
