In a bowl mix the olive oil, garlic, lemon, cilantro, oregano and seven spice. Add in the lamb chops and mix to make sure all pieces are coated with the marinade.
Cover the bowl and marinate for 30 minutes up to 2 hours.
Preheat the grill to medium high. Take the lamb chops out of the fridge, season with salt and let them to come to room temperature.
When the grill is ready, place the lamb chops on the grates and grill for about 3 minutes on each side for medium. If you prefer medium well, grill for 4 minutes on each side.
- Lamb chops are so tender when grilled to medium. Medium well or well done lamb chops would be a bit chewy.
- You can make homemade seven spice blend or use store-bought.
- You can freeze marinated lamb chops up to 3 months. Thaw in the fridge overnight, bring to room temperature and then grill according to the instructions.
