In a mason jar with a tight-fitting lid, add olive oil, freshly squeezed lemon juice, salt, oregano, garlic powder, onion powder, and honey.
Seal the lid and shake vigorously until the dressing is smooth and blended.
Taste the dressing and adjust the seasoning if needed.
Transfer the dressing to a clean jar or container and refrigerate. It will keep well for up to 2 weeks.
Use fresh lemon juice: Freshly squeezed lemon juice gives the dressing a bright acidity and a refreshing zing compared to bottled juice. I don’t recommend bottled lemon juice because it tastes flat or overly acidic.
Let it sit for better flavor: After mixing, let the dressing rest for 15 to 30 minutes before serving. This gives the ingredients time to come together and makes the flavor even better.
