  • In a mason jar with a tight-fitting lid, add olive oil, freshly squeezed lemon juice, salt, oregano, garlic powder, onion powder, and honey.
  • Seal the lid and shake vigorously until the dressing is smooth and blended.
  • Taste the dressing and adjust the seasoning if needed.
  • Transfer the dressing to a clean jar or container and refrigerate. It will keep well for up to 2 weeks.

Notes

Use fresh lemon juice: Freshly squeezed lemon juice gives the dressing a bright acidity and a refreshing zing compared to bottled juice. I don’t recommend bottled lemon juice because it tastes flat or overly acidic.
Let it sit for better flavor: After mixing, let the dressing rest for 15 to 30 minutes before serving. This gives the ingredients time to come together and makes the flavor even better.
