- 6 cups Spring mix
- 1 cup Strawberries cut into quarters
- 2 Persian cucumbers sliced
- ¼ Red onion thinly sliced
- ⅓ cup Pistachios roasted and unsalted
- 2 oz Goat cheese crumbled
- 2 tablespoons Olive oil
- 2 tablespoons Balsamic glaze
Place the spring mix in a large shallow bowl. Add in the strawberries.
Top with the cucumbers and sliced red onion.
Add the pistachios and goat cheese to the salad.
When you're ready to serve, drizzle the olive oil and balsamic glaze on the salad and gently toss it.
