Strawberry Salad with Goat Cheese

Ingredients

  • 6 cups Spring mix
  • 1 cup Strawberries cut into quarters
  • 2 Persian cucumbers sliced
  • ¼ Red onion thinly sliced
  • cup Pistachios roasted and unsalted
  • 2 oz Goat cheese crumbled
  • 2 tablespoons Olive oil
  • 2 tablespoons Balsamic glaze

Instructions

  • Place the spring mix in a large shallow bowl. Add in the strawberries.
  • Top with the cucumbers and sliced red onion.
  • Add the pistachios and goat cheese to the salad.
  • When you're ready to serve, drizzle the olive oil and balsamic glaze on the salad and gently toss it.

  • You can use spinach or arugula instead of spring mix. 
  • Instead of pistachios, you can use walnuts, pecans or pine nuts. 
  • Add grilled chicken to the salad to make it a whole meal.
