Hearty Low Calorie Sausage and potatoes

Sausage is one of those food items that has the same number of lovers and haters. Some love it for its convenience and diversity, some hate it because It’s not a real part of an animal. For me, it differs depending on where I have it. In Iran and Turkey, I wasn’t a big fan of sausage but in the U.S, I like cooking with it because the spices in sausage give the food a good kick that when I eat it, it’s like there is tiny bit of spice dance in my mouth.
It’s also quite easy to cook with sausage, especially the pre-cooked ones like the sausages I’m using today in this easy weeknight dinner. Basically you chop and cut everything, toss them in very little olive oil, put the dish in the oven and voila, after 35 minutes you have a beautiful tasty dish on the table.
The uncooked sausage on the other hand, is still new to me as I have never had it back in the Middle East. To me it’s tastier than pre-cooked ones and there seems to be many different dishes that can be made with it.
We made this dish on a day that we didn’t want to go grocery shopping and we used whatever was there in the fridge. It didn’t require lots of preparation and it didn’t take long to cook. I used barbecue spice and it complimented the dish very well. We roasted everything in the oven and used only one table spoon of olive oil. The result my friends, was a delicious lunch!
Hearty Low Calorie Sausage and potatoes
Ingredients
- 4 sausages, low-fat is preferred ,cut into 2-inch pieces
- 1 big potato, cut into 2-inch pieces
- 1 big onion, diced
- 1 big pepper, cut into big chunks
- 1 tbsp. olive oil
- Barbeque spice
Instructions
- Preheat the oven to 420F/ 210C.
- Place all the ingredients in a baking dish except oil and spice.
- Pour the oil and add the bearbecue spice. Toss until everything is coated.
- Bake in the oven for 35 minutes until potatoes are tender in the middle.
- Serve hot.
