Start your day happily with a delicious Mixed Berry Granola Parfait. Delicious layers of mixed berries, yogurt alternative, and granola = perfection in every spoonful.

The sun is finally out and I’m almost convinced that spring is here!
Finally the sky is bright blue and the sun is shining, you’ll see me outside more often from now on because this weather calls me and my book to take a walk in the park and spend some time together.
This weather also calls for a perfect fresh start, something light, yet filling and delicious. For such days, if I have no time, then my healthy strawberry milkshake is the winner. But if I want to fancy it up just a little bit, I’ll go with a layered breakfast such as this pretty mixed berry granola parfait. It’s made of three layers: mixed berry sauce, Daiya Greek Yogurt Alternative and gluten free granola.
It’s so simple and easy, yet is my go to breakfast. It keeps me full all the way to lunch!

To make these mixed berry granola parfaits, I used Daiya Greek yogurt alternative (black cherry and vanilla, which will be in stores soon!) that’s made with coconut cream and is really rich & creamy and delivers the taste and texture of traditional yogurt. It’s a great compliment to the berry mixture and can also be used in smoothies or just as a delicious afternoon snack. Plus it features 6 to 9 grams of plant-based protein so it keeps you full.
To make the mixed berry sauce, I simply cooked strawberries, raspberries, blueberries and blackberries with some corn starch and maple syrup. It’s pretty simple, you can even make a big batch of this sauce and have it in the fridge and just whip up the parfaits in the morning.
As for the granola, feel free to use your favorite. I made my coconut almond granola and enjoyed it on top of the parfait.

Mixed Berry Granola Parfait
Ingredients
- 1 1/2 cup mixed berries, Strawberries, blueberries, raspberries and black berries
- 2 tbsp maple syrup
- 1 tsp cornstarch, Gluten free
- 2 packs Daiya Greek Yogurt Alternative, Black Cherry And Vanilla
- 4 tbsp Gluten free Granola
Instructions
- Place mixed berries, maple syrup and cornstarch in a sauce pan over medium heat, stir until they are cooked and soft.
- Place the mixed berry mixture in a blender and blend until smooth.
- Put the mixture back on the heat and stir occasionally until thickens.
- Set aside to cook.
- Once cool, fill a third of each glass with the mixed berry mixture, top with Daiya Greek Yogurt Alternative and Gluten Free Granola.
- Serve immediately.
