Pomegranate Parfait is a tasty and fancy dessert made with only 4 ingredients that are already in your pantry. Sweet and tangy!
So Yalda is around the corner! Ok, what is Yalda? Yalda is the longest night of the year (December 21st). Iranians always celebrate this night together with their families.
Pomegranate, watermelon and special Yalda nuts can be found in almost every Persian household on this particular night. Depending on the city and region, and of course family traditions, there are other types of food and snacks that can be served on the night of Yalda. I will write more about Yalda this week because I am going to post two more recipes for Yalda. (Yay! So excited!)
In my family we always make a dessert using pomegranate and we always cross our fingers that our pomegranate for that night turns out to be super red. Sometimes it's quite white and though it's still delicious, it doesn't really thrill me if it's not bright red. But look at this one! This one was beautifully red!
I am crossing my fingers for a very red pomegranate for this year's Yalda too because I am making a couple of pomegranate desserts. One of them is this pomegranate parfait with only four ingredients!
Here is a confession: I am OBSESSED with condensed milk. I put it in my oatmeal, in cookies, in desserts, you name it. For this pomegranate parfait, I have also used a great combination of plain yogurt and condensed milk. The sweetness that condensed milk gives yogurt is much more pleasant the pre-sweetened yogurt. The mixture has a very creamy and silky texture that makes this parfait very delicious.
I love cinnamon graham crackers and I used them to give some crunch and texture to my pomegranate parfait - but you can use any type of sweet crackers that you like and adjust the sweetness of the yogurt-condensed milk mixture to match it. This is a very forgiving dessert. And, well, it never hurts to add another spoon of condensed milk!

4-ingredient Pomegranate Parfait
Ingredients
- 8 cinnamon graham cracker crumbled
- 2 cups plain yogurt I used low fat
- ¾ cup sweetened condensed milk
- 2 pomegranates deseeded
Instructions
- Divide graham cracker crumbs among 4 glasses or small jars.
- Mix yogurt and sweetened condensed milk in a bowl, add more condensed milk if you want your mixture to be sweeter.
- Divide half of the mixture among the jars on top of the crumbs.
- Cover with some pomegranates.
- Repeat the layers and top with pomegranates.
- Serve cold.

First of all, love your blog's name because I put ketchup on everything 😀 And yea that's what I like about mixing plain yogurt and condensed milk too, plus if you want it to have a bit of vanilla taste, you can just add some extract (or any other extracts, mint, caramel , etc) I'm sure this will be good with any type of fruit! 🙂 <3
