Chicken Lentil Soup
- Onion and garlic - Carrots and celery - Chicken thighs - Spices - Chicken stock - Lemon - Olive oil
Sauté onion and garlic until golden. This would take about 5 minutes.
Add in diced carrots and celery. Cook for two minutes.
Add in the chicken and all the spices. Add the lentils and stir well.
Add the chicken stock and water. Cook until the lentils are fully cooked, about 45 minutes.
Adjust the salt, add lemon juice and fresh dill. Serve warm.
