Menemen Turkish Eggs and Tomatoes
Green bell pepper
Heat olive oil in a pan and sauté onion until translucent.
Add green bell peppers and cook until soft.
Add in the tomatoes and spices. Stir well and cook until the tomatoes are soft and some of the water has evaporated.
Add the eggs to the tomatoes. Cook and stir until the eggs are just cooked.
Top with chopped parsley serve with fresh bread.
