The Best Fried Eggplant


- Italian eggplants - Olive oil  - Tomatoes  - Garlic - Salt and pepper

Wash and dry the eggplants. Slice them into 1/2 inch thickness.

Sprinkle them with salt and let them sit for 45 minutes. Pat dry them with a paper towel.

Fry the eggplant in olive oil for 4 minutes on each side. The fry the tomatoes.

Fry the garlic slices  for a couple of minutes until golden.

This is a delicious side dish for beef or chicken.
