Hi again! So good to see you here!

This is our first Easter and by that I mean for first time me, my sister in law and my niece are all together for this holiday! They are really excited and love seeing all the decorations and activities that are happening around us for Easter. We are even invited to our friends’ home for Easter, which is really exciting!

So we are all about Easter over here, even though we are all new to the celebration I believe we should always find a reason to celebrate because life is too short to not celebrate!

A last minute Easter treat, these No Bake Egg Nest Cookies are so easy that you can make them with your little ones!

So as there is so much Easter and spring happiness going on in our home, we decided to make a last minute Easter treat and share it with you! There is a savory Mediterranean deviled eggs recipe on the blog but we also need something sweet! These no bake egg nest cookies are so simple that they don’t even need a recipe – however, I’ve written all the instructions in the recipe card just in case.

To make these no bake egg nest cookies you need some crackers, we used whole wheat Ritz. Spread some cookie butter on the crackers and press them together to make a cookie with filling. Before I go any further, I want to talk to you about cookie butter. You guys, this stuff is awesome. I know, I know. Not the healthiest choice but once in a while, a little bit of indulgence is necessary in life.

Alright, now that I have my love for cookie butter off of my chest, lets go back to the recipe. Once the cookies are ready, place them in the freezer for 10 minutes and start melting some white chocolate. Once it’s melted, dip the cookies in the white chocolate and top them with toasted coconut and chocolate eggs.

I toasted the shredded coconut in a small pan over medium heat, stirring it constantly so it doesn’t burn. These no bake egg nest cookies are so easy to make and what I loved the most was that my almost 4-year old niece got to help us and made some of the cookies you see in the photos!

No Bake Egg Nest Cookies

Ingredients 

  • 12 whole wheat ritz crackers
  • 2 tbsp cookie butter, more if you like
  • 4 oz white chocolate, melted
  • 4 tbsp unsweetened shredded coconut
  • 6 chocolate eggs

Instructions 

  • Spread cookie butter on the crackers and press them two by two.
  • Place the cookies in the freezer for 10 minutes.
  • Melt the white chocolate in the microwave, stir every 15 seconds.
  • Toast the shredded coconut in a small pan over medium heat, stirring constantly.
  • dip one side of the cookies in white chocolate and top them with toasted coconut and chocolate eggs.
