    Avocado Toast Boats

    Avocado toast boats are perfect breakfast that are nutritious, easy and delicious! It takes only 10 minutes to make a full breakfast that is not all sugary!

    I have already mentioned what my favorite breakfast is and how easy it is to make it. What I like about my ultimate overnight oatmeal is that it satisfies my sweet tooth and I won’t crave anything sweet through the day.

    But what if I want something savory for breakfast? Do I just go out and get eggs benedict? Well, ok maybe once a month but that’s just because they make it so well and they give big portions! So I will have breakfast for 3 days whenever I go to the Original Pancake House. But this is about the avocado toast boats! They do look like a boat, right?

    This is the perfect breakfast for the times you want to be healthy and eat tasty savory breakfast that is not full of oil or butter. Avocado toast boats are easy to make and they are so tasty. Plus all you need is:

    Half a baguette, cut in half lengthwise

    1 avocado, mashed

    Salt and crushed red pepper

    Some lemon and cherry tomatoes

    So basically everything that can be found in almost every home now.

    I am sure you all know a lot about avocados and how good they are for health, I didn’t use to have them a lot before I met Kyle, but then because he loves guacamole, I started to use it in cooking and I add it to many toasts and sandwiches , it goes well with everything. It can even be used instead of mayonnaise! How awesome is that?

    For this avocado toast boats, all you have to do is to toast your baguette, either with or without butter (I didn't use butter), mash the avocado and mix it with salt and pepper, spread it on the baguette and put some lemon or tomatoes or both on it! Voila! That’s all!

    So now, take that half baguette which is a leftover from the other sandwich you made, some avocado and start making avocado toast boats!

    Ingredients
      

    • Half a baguette cut in half lengthwise
    • 1 avocado mashed
    • ½ teaspoon salt
    • ½ teaspoon crushed red pepper
    • ¼ lemon
    • 3 cherry tomatoes

    Instructions
     

    • Toast the baguette in a pan over medium-high heat (using butter is optional)
    • spread the mashed avocado on the baguette slices.
    • Sprinkle with salt and crushed red pepper.
    • top with lemon and tomatoes.
    • Serve immediately.
