Looking for a show stopping summer treat? Try this quick date halloumi skewers! Made in less than 10 minutes, sweet dates and salty halloumi make the best combination that everyone loves!

If you love sweet and salty flavors, today’s recipe is for you! Just like my baked feta or fried halloumi, these skewers (or should I call them halloumi kebabs?) are bursting with so much flavor. The recipe is so simple, yet when I posted a sneak peak a few days ago, so many of you said you cannot wait to make it. So let’s not keep you waiting, because these are going to be your favorite!

Halloumi deserve a lot of appreciation, cheese that you can fry or grill and it doesn’t melt? Sign me up! You can use halloumi in so many way, make a sandwich with it, grill it as a starter, fry and add to salads, you name it! When grilled, halloumi gets crispy on the outside while maintaining a tasty creamy inside, just perfect in every way!
Ingredients

Halloumi: Halloumi is a semi-hard, brined cheese traditionally made from a mixture of sheep’s and goat’s milk. Originating from Cyprus, halloumi has a high melting point, making it ideal for grilling or frying without losing its shape. You can find halloumi in most well-stocked grocery stores, Middle Eastern or Mediterranean markets.
Dates: I use Natural Delight Medjool dates to make this recipe because they are large, perfectly sweet and soft.
Honey: This is optional but you can drizzle some honey over the halloumi after grilling.
Mint: I love serving these on a bed of fresh mint in summer. Not only it’s visually beautiful, but it also adds a nice fresh flavor to the dish when served together.
Pistachios: Chopped pistachios add a nice crunch to the soft dates.

How To Make Date Halloumi Skewers
Preheat the grill to medium high. Cut the block of halloumi cheese into 12 pieces and thoroughly dry every pieces using a paper towel.

If the dates are not pitted, open them up using a small knife and take the pit out.
Thread the halloumi cubes and pitted dates on 8-inch skewers. You can use smaller skewers if desired.


Lightly brush the cheese with olive oil. Grill for 3 to 5 minutes on each side. Alternatively, you can cook them in a pan over medium high heat. Place the skewers on a platter with mint, and top with some honey and chopped pistachios.


What goes well with Halloumi skewers?
These would be a wonderful snack or appetizer for a barbecue gathering. Make some Middle Eastern chopped salad, grilled chicken breast and green beans, and you’ve got yourself an easy yet delicious feast.
Storage
If you have leftovers, place them in an airtight container and refrigerate for up to 4 days. You can reheat them in a pan over medium heat for about 10 minutes, flipping them halfway through.

Grilled Date and Halloumi Skewers

- Preheat the grill to medium high.
- Cut the halloumi cheese into 12 pieces. Make sure to dry each piece very well using a paper towel.
- If the dates are not pitted, open them using a small knife and remove the pit.
- Thread the halloumi cubes and dates on skewers. For each skewer use 2 dates and 2 halloumi cubes.
- Brush the cheese with the olive oil.
- Place the skewers on the grates and rill for 3 to 5 minutes on each side.
- Arrange the mint on a platter, place the skewers and top with honey and pistachios. Serve warm.
