Hello summer! I love you and have missed you so much!
The one thing I love about summer is the opportunity for gatherings. As schools are closed and people have more free time at hand – and the weather is more pleasant – summer calls for so many parties and gatherings. I love my gatherings to be fun, simple and really delicious. I’m talking about it being so delicious, my guests keep talking about it for weeks!
I’ve already shown you how to build the perfect cheese board, which is great for appetizers or just snacking. This time, I’m going to show you a dessert set up. One set up that I particularly like is a “make your own no bake cheesecake bar”. It’s always a hit!
It’s pretty simple to set up a make your own no bake cheesecake bar. You need a base for your cheesecake, which I usually make with the simplest recipe possible. Always add a splash of vanilla as it makes a nice base for any topping your guests want to use.
As for the toppings, the possibilities are endless. You can, of course, go with seasonal flavors. Here I have some toppings that are versatile and also compliment each other. However, the star of the toppings is this gorgeous peanut butter sauce I made, using Peter Pan® Peanut Butter. This sauce is creamy, slightly sweet and goes well withe either fruit or chocolate chips!
It comes in a variety of styles, so there is something for everyone to love and enjoy! Here I mixed Peter Pan Peanut Butter with some coconut oil and maple syrup to make a smooth, velvety sauce which we all loved.

As for the other toppings, I had some chocolate sauce, chocolate chips, graham cracker crumbs, nuts and some delicious berries. Place some small mason jars or bowls on the side so your guests can make their own no bake cheesecakes with the toppings they desire.
Here is an example of a no bake cheesecake in a small mason jar. I made this one with graham crackers, chocolate chips, peanut butter sauce and some berries, I have to tell you that it was awesome! The creamy peanut butter sauce paired with chocolate chips, an unbeatable combo you won’t be able to resist!
Notes and tips to make your own no bake cheesecake bar:
- I used walnuts but you can use any kind of nuts that you have at hand, preferably raw nut.
- Use light cream cheese for a lighter cheesecake base.
- Try new combinations for your cheesecake bar such as: almond cranberry, chocolate walnut, peanut butter and jelly, etc.
- Use different seasonal fruit for your no bake cheesecake bar. Some suggestions are: berries, nectarines, peaches, bananas and kiwis.

Make Your Own No Bake Cheesecake Bar
Ingredients
No Bake Cheesecake:
- 32 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
Peanut Butter Sauce:
- 1/2 cup Peter Pan® Peanut Butter
- 3 tbsp coconut oil
- 3 tbsp maple syrup
Instructions
No Bake Cheesecake:
- Beat cream cheese in a large bowl until soft and creamy, add in powdered sugar and mix well.
- Add in heavy whipping cream and vanilla extract. Whip until well combined. Chill in the fridge.
Peanut Butter Sauce:
- Mix all the ingredients in a bowl, taste and if needed, add more maple syrup, one tbsp at a time.
