As I’m in the Denver airport lounge and waiting for our flight to Seattle to board, I’m thinking about all the delicious food we are going to eat in Seattle. After all, I’m a food blogger – what else can I think about?

Thinking abut all the food we will be eating in the next 5-6 days makes me also wonder about the time that we are going to switch to healthier food to balance all the cookies and other treats we indulge in these days. That’s why I’m writing this post in advance to go live right after Christmas so you know what to make next!

After all the work and preparations for Christmas parties and meals, even I would like to make something simple that doesn’t require tons of ingredients or several steps of preparation. If you feel anything like me, you will also love this 4-ingredient honey mustard baked chicken using Don Victor® honey!

Don Victor® Honey comes with beautiful honeycomb in the jar that is perfectly edible and a delicious add to any food, savory or sweet. Personally I love having a piece of honeycomb with my tea especially when I’m sick because honey is also a natural cough suppressant. I also like to spread it on hot bread or pair it with different types of cheese especially brie. A piece of honeycomb paired with brie is a perfect appetizer! Also, I always store honey in my pantry or just on the counter. I don’t like my honey to crystallize therefore I don’t store it in the fridge. If you have already stored honey in the fridge and now it’s crystallized,  place the jar in warm water and stir until it’s clear again.

I also used a piece of honeycomb to make this 4-ingredient baked honey mustard chicken. I love using honey in general because it’s a good source of carbohydrates and balances the flavor very well in a dish. Mix equal parts of honey and Dijon mustard and you’ll get yourself one good mixture to cook the chicken pieces in!

Depending on the size of the chicken pieces, this 4-ingredient baked honey mustard chicken takes between 30-40 minutes to cook and can be served on white rice with some kind of vegetable on the side such as sauteed Brussels sprouts. I love to drizzle the remaining cooked honey mustard sauce on the chicken when served and add a chunk of honeycomb to add a little bit more sweetness to the dish.

I know I’m going to make this dish over and over because it’s super easy and a better option for a tasty family dinner. I hope you like it, too!

Ingredients 

  • 1 whole chicken breast, cut into 8-10 chucks
  • 1/2 cup Don Victor® Orange Blossom Comb Honey Globe Jar + 1 inch Honey comb
  • 1/2 cup Dijon Mustard
  • 1 tsp garlic powder

Instructions 

  • Preheat the oven to 350F.
  • Mix Don Victor® Orange Blossom Comb Honey and honey comb, Dijon mustard and garlic powder in a large bowl using a whisk.
  • Add the chicken to the bowl and stir well until it's covered in the sauce.
  • Transfer the chicken to an oven safe dish and cover it with the remaining honey mustard sauce.
  • Bake in the oven for 30 - 40 minutes until chicken is cooked through.
  • Serve with white rice and sauteed brussels sprouts.
