These stuffed potato patties were a dish I make very often, it’s easy, and so delicious. They make a full meal with some green salad on the side.
My mom is the best cook in the world, she cooks every single day, at least 2 different meals and all of them are so delicious. I remember when I was in Iran, we used to cook a lot together. Our kitchen was our lab. When I was out and came up with a recipe or saw an interesting one somewhere, all I had to do was to call my mom and tell her: “We’ve got to make this! Put the butter and the eggs out maman!” And our experiment would start from that point.
Still whenever I am with my maman, we cook and bake together, she is my best girlfriend, my partner in crime, my biggest cheerleader and one person that always believed in me no matter what came around. I always owe her everything, maman Jan I love you the most.
These stuffed potato patties were a dish my mom makes very often, it’s easy, and so delicious. They make a full meal with some green salad on the side and you can easily pack them for your kids’ lunch. You can also keep them in a container in a refrigerator for up to 5 days.
When I want to boil potatoes and later mash them, I first peel them, chop them into big chunks and then boil them. This way they cook much faster and it’s easier to mash them.
The potato mixture for these patties doesn’t have to be all firm, it’s going to be sticky depending on the potato, but don’t add more flour because it will get all hard and not as delicious. To make the patties, rub some olive oil on your palms and then in will be easier to shape the patties.

Maman's Stuffed Potato Patties
These stuffed potato patties have been in my family for over half a century!
- 2 big potatoes chopped and boiled
- 5 tbsp flour
- 1/2 tsp salt + 1/2 tsp for potatoes
- 1/2 tsp black pepper
- 1/2 tsp turmeric for filling + 1/2 tsp for potatoes
- 1 large egg
- 1 tbsp. olive oil + more for frying the patties
- 1/2 lb ground beef
- 1 big onion
- 1/2 can tomato sauce
Heat 1 tbsp. olive oil in a pan.
Sauté onions until translucent.
Add ground meat and cook fully.
Add salt, black pepper, turmeric and tomato sauce. Stir until fully combined.
Let the filling cool.
Mash the potatoes, add eggs and flour and mix well.
Add spices and mix again. The mixture might be somehow sticky, that’s how it should be.
Rub some olive oil on your palms, grab some of the potato mixture and shape it into a circle.
Spread some of the filling on the patty.
Grab some more of the potato mixture and shape it to a circle and put it on the filling. With your fingers, press the edges and make a whole patty.
Do the same with the rest of the mixture.
Heat some oil in a pan to fry the patties.
Fry the patties 2-3 minutes on each side until brown.
