Salmon is one of my absolute favorite proteins to work with because it’s so tasty, flaky and easy to cook. This whole salmon recipe takes less than 30 minutes to come together and is packed with amazing flavors thanks to fresh onion, tomato, capers, sliced olives and oregano. It’s one of our favorite holiday main dishes to enjoy.

Why baking salmon works

Baking salmon is probably my favorite way to cook salmon for a few reasons:

  • Baking salmon in the oven is straight-forward and pretty simple and is usually done in a one sheet pan.
  • You need just a few ingredients and less than 30 minutes to prepare this baked salmon.
  • Baking salmon requires minimal preparation and very little hands-on time.
  • Oven baked Alaska salmon is always cooked perfectly and is flaky and tender.

Ingredients

To make oven baked Alaska salmon with capers and olives you need the following ingredients:

  • Salmon: I always get Alaska salmon because it’s easily adaptable to different palates and budgets, allowing you to have a restaurant quality meal at home. What I love most about Alaska salmon is that it comes out perfectly no matter how you cook it – whether pan seared, broiled or baked, you will always end up with a perfect meal.
  • Lemon: I never skip lemon when it comes to baked salmon recipes. The kick and flavor coming from lemon enhances the rich flavor of Alaska salmon.
  • Capers: For a delicious addition of flavor, a few capers will take your baked Alaska salmon to a whole new level!
  • Olives: I used a combination of green and Kalamata olives that were pitted. The strong flavor of olives pairs perfectly with the Alaska salmon.
  • Red onions and tomatoes: These make a great side for baked Alaska salmon. You can also add other vegetables such as potatoes or asparagus.
  • Spices: Olives and capers give amazing flavor to this oven baked Alaska salmon sheet pan dinner so I usually go simple and use some salt, pepper and oregano.
To make baked salmon, you need a side of salmon, olives, lemon, onion and tomatoes

Instructions

Preheat the oven to 400°F and coat a baking sheet with nonstick spray. Pat dry Alaska salmon and place it skin side down on the baking sheet.

Slice the onions and place them around the Alaska salmon with cherry tomatoes. Drizzle a little bit of olive oil on the vegetables and Alaska salmon and top with salt, pepper and oregano. Place lemon slices on the salmon. Add capers and sliced olives to the salmon and vegetables.

Bake in the oven for about 20-25 minutes until the Alaska salmon is flaky and cooked.

Place salmon on the baking sheet and top with lemon and capers and olives. Bake with tomatoes and onions.

Frequently asked questions

How to know if the salmon is cooked?

The FDA notes that salmon should reach a 145°F internal temperature to be safe to eat. For a side of salmon, that is usually somewhere between 20-25 minutes in a 400°F preheated oven. However, always check the flesh of salmon: if it’s opaque and flaky, it’s ready to eat.

Do you bake salmon with skin on or off?

You can bake Alaska salmon with or without skin. I always cook it with skin since it’s easier to serve that way. Alaska salmon has a delicate and flaky flesh which is super easy to handle with skin on.

How should I store baked salmon?

I strongly recommend that you serve the salmon right away because that’s when it tastes the best. However, you can also store it in an airtight container and refrigerate for up to 24 hours. Baked salmon doesn’t freeze well since it loses its texture and flavor once frozen.

Can I use frozen salmon for this recipe?

Yes, simply thaw the salmon in the fridge beforehand and then follow the instructions as mentioned in the recipe card.

Serving suggestions

This easy baked salmon with vegetables is a complete meal on its own and we love serving it with a side salad such as Mediterranean couscous salad or cucumber tomato avocado salad.   • For this recipe, we used a side of Alaska salmon and sliced it after cooking. If you prefer fillets, you can simply make oven baked salmon fillet by following the same instructions in the recipe.
  • Herbs work perfectly in this recipe. For more flavor add some parsley and dill to the salmon once it’s baked.
  • Since this salmon recipe comes together in only 30 minutes and is packed with amazing flavors, it’s a great option for busy weeknight dinners. As the Alaska salmon is baking, make a quick salad and you’ll have a full meal.
  • If you would like to cook frozen salmon, simply thaw it in the fridge overnight and then proceed with this recipe. Do not thaw salmon in the microwave.

Ingredients 

  • 4 lb Alaska salmon , skin on
  • 2 red onions, sliced
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil , extra virgin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp oregano
  • 2/3 cup green olives and Kalamata olives, sliced
  • 1/4 cup capers
  • 2 lemons, thinly sliced

Instructions 

  • Preheat the oven to 400°F and coat a baking sheet with nonstick spray.
  • Place the side of Alaska salmon skin side down on the baking sheet.
  • Place the sliced onions and cherry tomatoes all around the salmon.
  • Drizzle olive oil on the veggies and a little bit on the Alaska salmon.
  •  Sprinkle salt, pepper and oregano on the salmon, onions and tomatoes.
  • Add olives and capers to the Alaska salmon and veggies.
  • Place the lemon slices on the salmon.
  • Bake in the oven for about 22-25 minutes until the Alaska salmon is opaque and flaky. The internal temperature in the thickest part should be 145F.
  • Serve warm.
