This cucumber tomato avocado salad is perfect for any day of the week. This easy and tasty salad comes together just 15 minutes and is full of flavor thanks to sun dried tomatoes and olives.
We usually keep our salads pretty flavorful yet simple. Our favorites are fattoush salad, Greek salad and Mediterranean salad . I will happily eat a big bowl of delicious and tasty salad loaded with fresh veggies any day of the week! Today’s salad is filled with juicy tomatoes and creamy avocados and is flavored with fresh lemon juice and extra virgin olive oil.

A big bowl of fresh salad is always a good idea, especially if it includes avocados and cucumbers! This simple and tasty salad can easily be a staple at your home because:

- Flavors: The olives add so much flavor to this salad that we usually don’t add any spices except for a little salt.
I love this tomato avocado salad as it puts a Mediterranean twist on a traditional combination with the addition of sun dried tomatoes and olives.
Ingredients
- Avocados: Make sure your avocados are firm but ripe. To check the ripeness of your avocado, peel the cap on top of the avocado. If it’s green underneath, then it’s ripe. If it’s brown, it probably has brown marks inside as well. And if the cap doesn’t come off, it’s not ripe yet.
- Tomatoes: Roma tomatoes work best for this recipe. It’s best if the tomatoes are firm.
- Cucumbers: Persian cucumbers or mini cucumbers work best in this recipe.
- Olives: I love using Kalamata olives but green olives work as well.
Instructions
- Thinly slice the onion and place it in a bowl.
- Add the the sliced cucumbers and olives.
- Add in the chopped avocado, tomatoes and sun dried tomatoes.
- Mix in the lemon juice and olive oil on the salad and sprinkle some salt.
Serving suggestions
This tasty and fresh is great with any grilled meat such as shish kabob and grilled chicken. It’s also a nice side dish to a quick dinner such as oven baked salmon or Mediterranean chicken.
Variations
Here are some suggestions to make this salad more exciting:
- Herbs: Jazz this salad up by adding some fresh herbs such as parsley, mint, dill or green onions.
- Make it more filling: Add some grilled chicken, salmon or shrimp to turn it into a complete meal.
- Vegetables: You can add other vegetables such as red bell pepper or artichokes.

You can leave out the red onion or use green onions instead.

Cucumber Tomato Avocado Salad
Ingredients
- 1 English Cucumber
- 2 Tomatoes
- 2 Avocados
- 1/2 Red Onion
- 1 cup Pitted Olives, Kalamata and green
- 1/3 cup Sun Dried Tomatoes, Chopped
- 1 Lemon
- 2 tbsp Olive Oil
- 1 tsp Salt
Instructions
- Slice the cucumbers and dice the tomatoes, place them in a large bowl.
- Dice the avocados and add them to the tomatoes and cucumbers.
- Slice the red onion and add it to the salad with olives and sun dried tomatoes.
- Using two spoons, mix everything well and squeeze the lemon on the salad. Drizzle the olive oil and stir.
- Sprinkle the salt on the salad, stir and serve immediately.
Notes
- Use firm tomatoes and ones that don’t have too many seeds. Firm tomatoes are great for this salad as you’re going to stir them and they will still hold their shape.
