Sauteed Zucchini with Garlicky Yogurt

This sauteed zucchini is served over a bed of cool garlicky yogurt with caramelized onion, turmeric, and lemon zest. Five ingredients, 20 minutes, and it works as an appetizer, a side dish, or a light lunch.

Fresh Zucchini, Good Yogurt, and Nothing Extra

This is the kind of recipe that only works when the ingredients are good. Zucchini is mild by nature, which makes it one of the best vegetables for taking on the flavor of spices. The turmeric gives it a golden color and a subtle depth that brings everything together. A little goes a long way here, half a teaspoon is exactly right. More than that and it tips into bitter.

The garlicky yogurt is not a garnish. It is the base the whole dish is built on, and it is what makes this more than just sauteed zucchini. The cool, tangy yogurt against the warm, golden vegetables is what makes every bite satisfying.

Use whole milk Greek yogurt here. Low-fat or non-fat yogurt has too much water and will not give you the same creamy, rich base. If you have the time, homemade yogurt (my recipe uses the instant pot, is even better. You can also use labneh which will give it a slight tangy flavor we all love.

I developed this recipe from the Persian and Mediterranean flavors I grew up with. It is not a classic dish from any one cuisine, but it tastes like it could be.

How I Developed This Recipe

This recipe has very few ingredients, so the technique is what makes it work. A few things matter more than others. Here is what I learned while testing:

  • Cut the zucchini evenly, about half an inch thick. Thinner and they go mushy before they get any color. Thicker and the outside browns before the inside cooks through. Consistent thickness means everything finishes at the same time.
  • Keep the heat at medium-high. This is what gives the zucchini its golden color without turning it soft and watery. Lower heat means the zucchini steams instead of sautees and you lose all the texture.
  • Give the onion real time. It needs to soften and start turning golden before the zucchini goes in. A properly cooked onion adds sweetness that balances the turmeric. Rushing this step changes the flavor of the whole dish.
  • Do not skip the yogurt. The garlicky yogurt is what this dish is built on. Freshly grated garlic is best for this recipe and garlic powder will not give you the same results.

How to Make Sauteed Zucchini with Garlicky Yogurt

Saute the onion in olive oil over medium heat, stirring occasionally, until softened and turning golden. Add the zucchini in an even layer.

Add turmeric to the zucchini.

Cook until the zucchini begins to soften and pick up some color. Stir in the turmeric and cook for one more minute. Taste and adjust the salt.

Mix the yogurt with garlic, salt and lemon zest.

Stir together the whole milk Greek yogurt, lemon zest, grated garlic, and salt until smooth. Spread it across a wide platter. You can make the yogurt sauce up to a day in advance.

Arrange the zucchini on the yogurt.

Spoon the warm zucchini and onion directly over the yogurt on the platter. Serve immediately with warm bread. The zucchini should go straight from the pan to the table.

What to Serve It With

Warm homemade pita bread is the obvious pairing, but lavash works just as well. Tear off a piece, scoop up the zucchini and yogurt together, and enjoy. This dish also fits beautifully into a mezze spread alongside other vegetable dishes.

Ingredients 

  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 2 zucchini, sliced ½ inch thick
  • ½ teaspoon ground turmeric
  • 2 cups whole milk Greek yogurt
  • Zest of 1 lemon
  • 1 garlic clove, grated
  • ½ teaspoon salt
  • Pita bread or lavash, warmed, for serving

Instructions 

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until softened and starting to turn golden, about 6 to 8 minutes.
  • Add the zucchini in an even layer and cook until it begins to soften and pick up color, about 5 minutes.
  • Stir in the turmeric and cook for 1 more minute. Taste and adjust the salt.
  • Make the yogurt base: stir together the whole milk Greek yogurt, lemon zest, grated garlic, and salt until smooth. Spread across a wide platter. This can be made up to a day in advance and kept covered in the fridge.
  • Spoon the warm zucchini and onion over the yogurt on the platter. Serve immediately with warm pita or lavash.

Notes

  • Use whole milk Greek yogurt only. Low-fat or non-fat yogurt has too much water and will not give you the same creamy base.
  • Cut the zucchini to a consistent half-inch thickness so everything cooks at the same rate.
  • Keep the heat at medium-high so the zucchini gets golden, not steamed.
  • The yogurt base can be made up to a day in advance. The zucchini should be served immediately from the pan.
  • Half a teaspoon of turmeric is the right amount. More will make the dish bitter.
