Perfect Grilled Steak with Garlic Herb Sauce

This perfect grilled steak is easier than you think! With a simple seasoning and a flavorful garlic herb sauce, this steak will be the star of your dinner table.

I grill year round and my family loves it. From chicken wings and lamb burger to shish kabobs, nothing beats the flavor of meat grilled on a classic charcoal grill, served with some delicious side dishes. Today I’m going to show you how to grill steak on a charcoal grill and with my tips, you’ll be able to nail it every time!

Working with steak, especially grilling it, might seem intimidating to many cooks. However, following a few tips and techniques will guarantee the perfect steak every time.

The secret to the perfect grilled steak
To make the perfect steak, there are a few things you should keep in mind:
- Quality meat: High quality steak changes everything. Make sure the meat has a nice marbling. That’s where the flavor is.
- Thermometer: To have the perfect medium steak (or medium rare, if that’s what you like) you need to keep an instant-read thermometer at hand.
- Heat: When grilling over charcoal, it’s best to use direct and indirect heat. This means keeping all the charcoal on one side of the grill.
Ingredients

Steak – I used Lobel’s bone-in rib steak that has a beautiful marbling and is incredibly tender and offers the full-bodied flavor.
Seasoning – Since we are making a garlic herb sauce, we will use a simple seasoning of salt and pepper.
Garlic herb sauce – To make this sauce you need butter, olive oil, garlic, tarragon, parsley, rosemary, mint and cilantro.
How to grill steak
Start by pat drying the steak very well on both sides. Season liberally with salt and pepper and let it sit at room temperature for 30 minutes.

Meanwhile, prepare the charcoal grill. As the charcoal is heating, add the olive oil and butter to a small pan and place it over medium heat. Once the butter is melted, add in the shallots and garlic. Cook for a few minutes and then add the salt. Turn the heat off and add the chopped herbs plus the lemon juice.
Once the charcoal is ashy and very hot, carefully move the briquettes to one side of the grill. Cut a potato in half and rub it on the grates to prevent the meat from sticking. Place the steak on the grates over the charcoal (direct heat) and sear for 4 minutes on each side. Move the steak to the other side of the grates (indirect heat) and cook for another 3 to 4 minutes on each side until the internal temperature registers at 135 degrees F.
Transfer the grilled steak to a cutting board, let it sit for 10 to 15 minutes and then slice and serve with the garlic herb sauce.

Serving suggestions
This perfect grilled steak with a tasty sauce such as the herb sauce I mentioned here or my Lebanese garlic sauce (toum) makes a wonderful dinner. I love serving it with a side such as grilled asparagus, Mediterranean grilled vegetables, Greek salad or cucumber tomato feta salad.
If looking for starchy sides, try Greek potatoes, Turkish rice pilaf with orzo or Mediterranean potato salad. You can also turn it into a grilled steak sandwich!

Perfect Grilled Steak with Garlic Herb Sauce
Ingredients
- 2 USDA Prime Dry-Aged Bone-In Rib Steaks, 16 oz. each
- 2 tsp kosher salt
- 1 tsp black pepper
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 1 shallot, chopped
- 6 cloves garlic, minced
- 2 springs rosemary, chopped
- 1/4 cups parsley, chopped
- 1/4 cup tarragon, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup mint, chopped
- 2 lemon, juice of
- 1/4 tsp smoked paprika
Instructions
- Pat dry the steaks very well on both sides. Season with half of the salt and pepper. Let the steak sit on the board for a few minutes.
- Prepare the grill and wait for the charcoal briquettes to become hot and ashy.
- Meanwhile, place the butter and olive oil in a pan over medium heat. Once the butter is melted, add in the shallot and garlic. Cook for a few minutes until they're translucent and aromatic.
- Remove the pan from the heat and add the rosemary, parsley, tarragon, cilantro and mint. Stir and add the remaining salt and pepper. Add the lemon juice and smoked paprika. Stir and set aside.
- Once the briquettes are very hot, carefully move them to one side of the grill so you have direct and indirect heat. Cut a potato in half and rob it on the grates to prevent the meat from sticking.
- Place the steaks on direct heat and sear for 4 minutes on each side. Then transfer to the indirect heat and cook for another 4 minutes on each side until the internal temperature registers at 135°F (medium).
- Remove the steak from the heat and let it sit on the cutting board for 10 minutes. Then slice and serve with the garlic herb sauce.
Notes
- Keep a close eye on the steak to make sure it’s not overcooked.
- You can also use gas grill to cook the steak, follow the direct/indirect heat method.
- Store the leftovers in an airtight container and refrigerate for up to 2 days. Heat the sauce before serving.
