It’s basically a thick slab of firm cheese seared until golden and bubbly, a perfect appetizer or a hearty addition to a vegetarian main course. It takes just 10 minutes to make, requires only 3 ingredients (cheese, flour, and olive oil), and delivers crispy edges with a warm, melty center. Serve it with crusty bread and a squeeze of lemon for the full taverna experience.

What is Saganaki?
Saganaki, the ultimate Greek appetizer, is essentially pan-fried, flour-coated cheese This recipe uses kefalotyri cheese (the traditional choice), but I’ll also cover which other cheeses work if kefalotyri isn’t available.
Nowadays, saganaki in on the menu in nearly all Greek restaurants. If you’re lucky, you might even get tableside service with a chef shouting “Opa!” as the cheese is flambeed with brandy or ouzo. Trust me, it is worth giving it a try!
Besides, this cheesy starter is known for its simplicity and rich flavor. It features semi-hard cheese fried in a small pan until it gets crispy from the outside and gooey on the inside. Then they add some ouzo and light it on fire, quite a show!
Oh, and here is a little fun fact for you, “saganaki” actually refers to the name of the two-handled pan used to prepare the Greek saganaki.
It’s always tempting to compare saganaki to halloumi, but aside from very different geographic origins, saganaki has a very different texture and flavor due to how it’s coated in flour. I’ve tried both side by side and I had to choose only one to serve with a meal, I would personally lean towards halloumi just because it’s typically more seasoned – but you should definitely try both and decide which you like best!

Ingredients for Greek Saganaki
- Kefalotyri Cheese or Other Hard Cheese: When selecting your cheese for saganaki, opt for a variety that has a bold flavor and would not melt very fast. Kefalotyri cheese is traditional, but you can experiment with other hard cheeses like graviera or pecorino for a unique twist! Both cheeses are sturdier and harder than halloumi.
- All-Purpose Flour: The flour in this recipe plays a crucial role in creating that delectable and famous golden-brown crust on your saganaki.
- Olive Oil: Don’t skimp on quality when it comes to olive oil. A high-quality extra virgin olive oil will grant a rich flavor to your saganaki.

However, if you had leftovers, the key is to let the saganaki cool down a bit before wrapping it well in either plastic wrap or aluminum foil. Place it in the fridge for no longer than 2 days.
When you are ready to enjoy again, you can reheat in the oven or microwave.
Frequently Asked Questions
Traditionally, kefalotyri and graviera are two types of cheese used to prepare saganaki. If you cannot find either of these, kefalograviera is a suitable alternative. However, if you want to try this recipe and do not have access to any of the mentioned cheeses, make sure to use firm cheese such as pecorino that does not fully melt but remains soft on the inside.
I don’t recommend frying the cheese beforehand. However, you can coat it in flour in advance and fry it just before serving.
Coating the cheese with a light layer of flour before frying gives it the desired crunchy exterior. In addition to that, preheating the skillet contributes to the crispiness on the outside.
I understand the temptation to use feta since it’s so easy to find in supermarkets across the world. However, feta is too soft and crumbly for saganaki. It will fall apart in the pan rather than forming a crispy crust.

Instructions
- Dredge the block of cheese in flour and make sure every inch is well coated.
