What is Saganaki?

Saganaki, the ultimate Greek appetizer, has its roots in ancient Greece, where it was a staple dish enjoyed by locals.

Nowadays, individuals serve saganaki in nearly all Greek restaurants. Trust me, it is worth giving it a try!

Besides, this cheesy starter is known for its simplicity and rich flavor. It features semi-hard cheese fried in a small pan until it gets crispy from the outside and gooey on the inside. Then they add some ouzo and light it on fire, quite a show!

Oh, and here is a little fun fact for you, “saganaki” actually refers to the name of the pan used to prepare the Greek saganaki.

Greek saganaki ingredients, lemon, flour, olive oil, and cheese.

Ingredients for Greek Saganaki

  • Kefalotyri Cheese or Other Hard Cheese: When selecting your cheese for saganaki, opt for a variety that has a bold flavor and would not melt very fast. Kefalotyri cheese is traditional, but you can experiment with other hard cheeses like graviera or pecorino for a unique twist! Both cheeses are sturdier and harder than halloumi.
  • All-Purpose Flour: The flour in this recipe plays a crucial role in creating that delectable and famous golden-brown crust on your saganaki.
  • Olive Oil: Don’t skimp on quality when it comes to olive oil. A high-quality extra virgin olive oil will grant a rich flavor to your saganaki.
  • Fresh Lemon: Lemon juice is the secret ingredient that would take your saganaki into another level. The lemon drizzle you add at the very end just gives it a nice flavor kick and complements the saltiness and richness of the cheese really well!

  • Saganaki Cheese with Honey: This popular variation simply involves frying cheese saganaki and then drizzling it with honey while it is still hot.

Tips, Tricks, and Hacks

  • Picking the Right Cheese: When you think of saganaki, cheese is the star of the show! So, getting the cheese right is crucial. The classic choice is kefalotyri cheese, but if you can’t find it, graviera or pecorino would work.
  • Serve Right Away: Cheese is all about that gooey, rich goodness, right? And when it comes to traditional Greek saganaki you have got to serve it up sizzling hot and crispy to get that perfect texture and irresistible flavor!

  • Don’t Forget the Splash of Lemon Juice: Adding that splash of lemon juice is a game-changer! The fried cheese saganaki brings that rich, salty goodness, but a little squeeze of lemon juice takes it to the next level by balancing out those flavors. Don’t forget to give your sizzling cheese a good squeeze of lemon just before you serve it up hot!
  • Get the Pan Nice and Hot: Greek saganaki is all about that dreamy crispy exterior, right? So, to get it just right, you have got to make sure that the skillet is preheated. That step ensures that crunchy outer layer without overcooking the cheese.

Storage

Storing leftover saganaki is a rare occurrence, because let’s face it, who can resist such a mouth-watering starter that is meant to be enjoyed hot?

However, if you had leftovers, the key is to let the saganaki cool down a bit before wrapping it well in either plastic wrap or aluminum foil. Place it in the fridge for no longer than 2 days.

When you are ready to enjoy again, you can reheat in the oven or microwave.

Frequently Asked Questions

What is the right type of cheese for saganaki?

Traditionally, kefalotyri and graviera are two types of cheese used to prepare saganaki. If you cannot find either of these, kefalograviera is a suitable alternative. However, if you want to try this recipe and do not have access to any of the mentioned cheeses, make sure to use firm cheese such as pecorino that does not fully melt but remains soft on the inside.

Can I prepare saganaki ahead of time?

I don’t recommend frying the cheese beforehand. However, you can coat it in flour in advance and fry it just before serving.

What grants saganaki that crispy outer layer?

Coating the cheese with a light layer of flour before frying gives it the desired crunchy exterior. In addition to that, preheating the skillet contributes to the crispiness on the outside.
