This Mediterranean-style breakfast toast is a standout treat. Italian Bread: Italian bread is ideal for Mediterranean egg breakfast toast because it has a sturdy texture that holds up well to toppings. Its mild flavor complements a variety of ingredients, and its slightly crispy crust adds a satisfying crunch.

Feta Cheese: Crumbled feta adds a tangy, creamy element that enhances flavor.

Mozzarella Cheese: Melts beautifully, providing a gooey, savory layer that complements the eggs.

Eggs: Eggs provide a rich flavor that pairs perfectly with other ingredients.

Red Pepper: Fresh red pepper offers a sweet, crisp contrast and vibrant color.

Parsley: Adds a fresh, herbaceous note and a pop of green to brighten the dish.

Kalamata Olives: Provide a briny, slightly tangy flavor that deepens the Mediterranean taste.

How To Make Mediterranean Breakfast Toast

Step 1

Preheat your oven to 400°F (200°C). Slice the Italian bread into evenly sized pieces, about 1/2 inch thick. Arrange the slices in a single layer on a baking sheet.

Step 2

In a mixing bowl, combine crumbled feta cheese, shredded mozzarella cheese, diced red pepper, chopped parsley, and sliced kalamata olives. In a separate small bowl, beat the egg and then mix it into the cheese and vegetable mixture. Season with oregano, Aleppo pepper, and kosher salt to taste, and stir to combine.

Step 3

Evenly distribute the mixture on top of each slice of bread. Spread the mixture out to cover the bread slices completely. Sprinkle some nigella seeds and sesame seeds on top.

Step 4

Place the baking sheet in the preheated oven. Bake for 15 minutes, or until the cheese is melted and bubbly, the eggs are cooked through, and the bread is golden brown and crispy. Remove from the oven and let cool slightly before serving. Enjoy warm as a delicious and satisfying breakfast or snack.

Serving Suggestions

A single egg toast makes a super satisfying and healthy breakfast, loaded with veggies, a bit of fat from the feta, and protein from the eggs. If you need a little something extra, add a drink. Try London Fog Tea Latte Drink, Almond Coconut Breakfast Smoothie, Three Layered Smoothie, or my favorite Coffee Milkshake.

Hummus: Pair this Mediterranean breakfast toast with a portion of Classic Hummus, offering a creamy, protein-packed dip that enhances the Mediterranean flavors.

Avocado Slices: Add a side of fresh avocado slices or a simple avocado salad for extra creaminess and a dose of healthy fats.

Pickled Vegetables: Serve with Quick Pickled Cucumbers for a tangy, crunchy contrast that complements the richness of the egg toast.

Substitutions

Bread: If you don’t have Italian bread, you can use sourdough since it has a sturdy base. You can also use whole grain or multigrain bread for added fiber. Avoid using baguettes, as they are generally too small to hold all the toppings well.

Vegetable Add-Ins: You can also add sautéed spinach, roasted red peppers, cherry tomatoes, or cooked and seasoned chopped potatoes.

Protein Variations: Include spicy Turkish sujuk, any preferred type of sausage, or crispy chopped bacon for a salty, savory addition.

Storage

Mediterranean egg breakfast toast is best enjoyed fresh, but if you have leftovers, store them in an airtight container and refrigerate for up to 3 days. You can reheat them in the oven at 300 degrees F for 15 minutes or in an air fryer at 380 degrees F for 5 minutes.

Pro Tip

Choose Italian bread to ensure it holds up well to the toppings and remains crispy after toasting. If the bread is too soft, it may become soggy under the weight of the ingredients.

Frequently Asked Questions

Can I use a different type of bread for this recipe?

Yes, you can use various types of bread such as whole grain or gluten-free. Sourdough is recommended for its tangy flavor and sturdy texture, but other options work as well. Avoid using baguettes as the slice would be too small and may not hold all the toppings well.

Can I make the toast vegan?

Yes, to make it vegan, use plant-based bread, skip the eggs or use vegan egg substitutes, and replace dairy cheese with vegan cheese or avocado.

Is the Mediterranean egg toast served hot or cold?

Mediterranean egg breakfast toast is best served hot. Serving it hot ensures that the bread is crispy and the flavors meld together well, providing the best texture and taste experience.
