This flatbread pizza is our latest obsession. Not only is it super simple and ready in no time, but it’s also versatile enough to accommodate picky eaters.

Why this recipe works

  • Easier than regular pizza: You’re not required to make a dough, wait for it to rise or roll it out. There are so many delicious and quality flatbreads available at regular supermarkets. Use store-bought flatbread to make the process a breeze! You can also use naan if flatbread is not available.
  • Cook a few at a time: Flatbreads are usually 6 inches in diameter, which is great for a personal pizza. You can cook 4 to 5 at the same time in the oven meaning everyone gets what they like and no one needs to wait!
  • Quick: You can have dinner on the table in less than 30 minutes, which counts as a win in my book!
  • A little something for everyone: Veggie lovers can pack theirs with veggies and meat lovers can use any kind of meat they like as long as it’s fully cooked. Got leftover chicken or steak? Make a flatbread pizza!

Flatbread pizza vs regular pizza

Regular pizza uses yeasted pizza dough whereas flatbread dough can be either yeasted or without yeast. Pizza dough is chewier whereas the other one is flatter, but not as thin as Turkish lahmacun or manakeesh.

Flatbread dough is also cooked before toppings are added while the pizza dough cooks with the toppings. Keep in mind that you can use store-bought flatbread for this recipe.

There are endless options for topping flatbread. Let’s start with the sauce: you can use the classic pizza sauce, olive oil, toum (Lebanese garlic sauce), zhoug or pesto. You can also drizzle some balsamic glaze on the flatbread pizza right before serving.

As for the meat, you can use anything as long as it’s fully cooked. So leftover chicken, sausage or steak would be perfect for this recipe.

When it comes to vegetables, I love using olives, peppers, onion, artichoke or spinach. I would also avoid using hard vegetables such as broccoli unless you’re going to sauté or cook them at least partially before adding to the pizza.

As for the cheese you use to top the pizza, you have many choices but the most common one is mozzarella. Depending on the recipe, you can use shredded mozzarella, a ball of mozzarella that you tear apart yourself, a log to slice or mozzarella pearls. Other kinds of cheese including feta, blue cheese or cheddar would work, too.

How to make flatbread pizza

  1. Preheat the oven to 425 degrees F and place 3 to 4 flatbreads on a large baking sheet.
  2. Spread the pizza sauce or olive oil on each flatbread and add your preferred toppings including cheese.
  3. Bake in the oven for 10 to 15 minutes until the veggies are cooked and the cheese is bubbly.
  4. Let it sit for a minute and then slice into 4 pieces. Serve immediately.

Serving suggestions

These are perfect on their own, but you can also serve them with Greek baked fries, garlic knots, a simple Greek salad, or fried halloumi.

Storage

Store the leftovers in an airtight container and refrigerate for up to 3 days. To reheat, place the flatbread pizza in a pan covered over medium heat. You can also reheat it in the oven at 300 degrees F for 15 minutes.

First, check the flatbread ingredients to make sure it doesn’t contain dairy. Most of the toppings are dairy-free except for the cheese. However, these days you can find good quality dairy-free cheese at the supermarket.

Ingredients 

  • 8 flatbreads , see notes

Cheese and pesto

  • 1/2 cup pizza sauce
  • 2/3 cup shredded mozzarella
  • 3 tbsp pesto

Zaatar

  • 3 tbsp olive oil
  • 1/4 cup zaatar
  • 1/2 cup shredded mozzarella

Artichoke and olives

  • 3 tbsp olive oil
  • 2 tbsp Italian seasoning
  • 2/3 cup shredded mozzarella
  • 2/3 cup marinated artichoke
  • 1/2 cup kalamata olives
  • 1/3 red onion , sliced

Margharita

  • 1/2 cup pizza sauce
  • 1/2 cup mozzarella pearls
  • 1/2 cup fresh basil , loosely packed

Instructions 

  • Preheat the oven to 425 degrees F. Place 3 or 4 flatbreads on a large baking sheet.

Cheese and pesto

  • Spread the pizza sauce on the flatbread and top with the shredded mozzarella. Spoon the pesto over the flatbread.

Zaatar

  • Rub the flatbreads with olive oil and sprinkle them with zaatar. Top with shredded mozzarella.

Artichoke and olives

  • Rub the olive oil over the flatbreads and season with the Italian seasoning. Top with shredded mozzarella cheese, marinated artichokes, kalamata olives and red onion.

Margharita

  • Spread the pizza sauce on the flatbreads and top with mozzarella pearls. Top with basil.

Bake in the oven

  • Bake the flatbread pizzas in the oven at 425 degrees for 10 to 15 minutes until the cheese is bubbling.

  • You can find quality flatbread in many supermarkets these days. If not available, naan would work, too.
